A little bit of this, a little bit of that, put it all together, top it all off with a little bit of this and maybe a little more of that and what you have is an easy green tomato pita PIZZA ! Until I figure out and complete my pizza dough experiments,I think this could be a nice and easy and quick option ! Of course I'm referring to my 2 last recipes (if you remember) the green tomato and tomato leaf purée, sauce and paste recipes (see recipes here) as well as the pita flatbread recipe (see recipe here). Feel free to use red tomatoes instead or any other favorite pizza sauce on your pita breads, but as I've said before, that tomato sauce prepared with fresh tomato leaves is so fresh and vibrant that I've eaten it 3 times since making it and made some more that I refrigerated ! And of course the pita breads are so easy and fun to make, especially if you make mini individual balls of pita bread dough that you simply flatten out and pan-fry them or oven-bake ! But then again, feel free to buy ready-made ones too, the idea behind this quick & easy recipe is to stay simple. I of course happened to have green tomato sauce and paste as well as pita breads ready because they were my last 2 recipes before this little pita-pizza meal. Yeah, sometimes I'm lazy too ! 4 individual pizzas

ingredients

  • 4 (100 grams each) pita breads (see pita bread recipe)
  • 300 grams of fresh green tomatoes (about 2)
  • 1/2 cup green tomato sauce (see green tomato sauce recipe)
  • 2 tablespoons of green tomato paste (see green tomato paste recipe)
  • 100 grams of feta cheese
  • 100 grams of mozzarella cheese
  • 12-16 fresh basil leaves (for the sauce and for garnish)
  • 1 tbsp olive oil

instructions

  • preheat your oven to 230°C on broil, with the rack in the middle or towards the top (to brown better)
  • cut 4 large round slices of green tomato and roughly chop the rest (discard the seeds)
  • mix together your tomato sauce and tomato paste to make your pizza sauce (add some chopped basil leaves or other herbs and spices if you wish)
  • sprinkle some corn meal on a large baking sheet and place the 4 pita breads on it
  • brush some olive oil on the top surface of each pita bread
  • with a spoon, spread some pizza sauce onto each pita bread (about 2 tbsp for each)
  • place 1 round slice of green tomato in the middle and a few chopped tomatoes around it, on top of each pita
  • top with crumbled feta cheese and mozzarella cheese and a few basil leaves (reserve some leaves for garnish after it has baked)
  • bake for 9-10 minutes, remove from oven, sprinkle some extra torn basil leaves on top and serve.
