Did you know that it is possible to buy a fresh ball of bread dough from your bakery ? Just simply ask for a ball of dough that weighs about 200-250 grams, the same weight as a baguette and there you go ! The idea behind this recipe is to to be able to enjoy a last minute urge and the speed of making an almost home-made pizza. Of course, we will prepare a tomato sauce ourselves for this pizza and also prepare the toppings, this is the least we can all do since the dough is practically ready, so no more excuses! Simply roll out the dough and let it rise for 30 minutes and during that time you can prepare your tomato pizza sauce and the toppings of your choice, and 30 minutes more later, it'll be ready to eat… :)

ingredients

dough

  • 1 ball of fresh bread dough (200-250 grams)
  • 1 tbsp wheat semolina (or corn flour or regular flour)
  • 1 tbsp olive oil

tomato sauce

  • 1 can of crushed/chopped tomatoes (400 grams)
  • 1 small can of tomato paste (70 grams)
  • 1-2 garlic cloves, crushed
  • 2 anchovies (optional but it is a flavor enhancer)
  • 1/2 beef stock cube (optional)
  • 4 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh parsley (and/or fresh basil, rosemary, thyme)

toppings

  • 100 grams of sausage (chorizo, pepperoni, merguez, etc.)
  • 1 onion or other vegetables (200 grams)
  • 10-15 cherry tomatoes (200 grams), halved
  • 200 grams of grated cheese (mozzarella, parmesan, swiss)
  • 1/4 cup chopped fresh herbs (parsley, basil, thyme, rosemary)

instructions

  • flour your work surface and roll out your ball of bread dough into a large flat circle
  • sprinkle your round pizza dish for the oven with a little semolina and place the dough on top and fold the edges in if necessary
  • let the dough rest for 30 minutes to rise a bit
  • in a small saucepan, add the olive oil, crushed garlic and finely chopped anchovies and cook over medium heat for 5 minutes
  • add the can of crushed or chopped tomatoes, tomato paste, 1/2 beef stock cube, oregano, salt and pepper and cook over medium heat for 15 minutes
  • add the fresh herbs and remove from heat to cool slightly
  • preheat your oven to 200°C (if you have a second pizza dish, let it heat up inside the oven, like a pizza stone)
  • cut your sausage into thin slices (fry separately if necessary for 5 minutes)
  • cut your onion (or other vegetables) into thin slices and fry 5 minutes on medium heat with a little olive oil
  • grate your cheeses and set aside
  • cut your cherry tomatoes in half
  • brush the top of the pizza dough with a little olive oil
  • spread half or two-thirds of the tomato sauce on the pizza dough (some sauce will remain but store it in the fridge for my next recipe)
  • on your dough, lay out your fried vegetables, sausage, then cherry tomatoes and some fresh herbs and grated cheese
  • place the pizza pan in the oven (or on top of the second hot pizza pan that is already in the oven)
  • cook your pizza for 20-30 minutes until the cheese has melted and is golden
  • remove from oven and let cool 5-7 minutes before cutting and serving
