I always boil too much pasta to go along with my prepared sauce and always leave all that extra pasta on the side which just dries out the next day and is often nibbled on the next day and/or finally thrown away the day after that ! Enough with the wasting of food, you can turn this leftover pasta into a snack. All you need is for the pasta to be slightly dried out but still soft enough and then fry it up quickly in hot oil and season it with whatever you like while it's still hot and then let cool and serve… :)

2-3 cups

ingredients

  • 2-3 cups of hollow pasta (1 day pre-boiled pasta that has slightly dried for 12-18 hours)
  • 1/2 cup grated parmesan cheese
  • 1/8 cup dried herbs & spices (oregano, thyme, paprika, allspice, garlic powder, sesame seeds, etc.)
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 2-3 cups of oil for frying

instructions

  • heat your oil in a deep casserole until very hot
  • in a large bowl, toss together your grated parmesan, dried herbs, spices, salt and pepper
  • gently drop small batches of the semi-dry hollow pasta into the hot oil and fry until bubbly and golden
  • remove and while still hot, quickly toss with the grated parmesan and herbs and spices mix and continue frying and immediately tossing with the cheese-spix mix until all the pasta is used up
  • let cool down and further dry out and serve
