SALAD for COCKTAIL HOUR - no forks required PLEASE !

Smarten'up and stop grinning… I know it's not really a recipe ! But it's fresh it's crisp, it's wholesome. Not a whole serving of salad, no salad bowl needed nor a fork to eat it with. Just salad spears, lightly coated with some slightly sweet, slightly tart, light and zingy dressing and edible with two fingers and in 1, 2, 3 bites !

Perfect to accompany a cocktail-buffet, a brunch, oysters or even a yogurt dip. Need I say more ?

ingredients

  • 2 heads of baby romaine lettuce (125 grams each)
  • 2 tbsp lime juice & some zest
  • sea salt and ground peppercorns (to taste)
  • 1/4 tsp crushed pink peppercorns
  • 1 tbsp chopped fresh dill
  • 4 tbsp olive oil
  • 1 tsp liquid honey
  • optional : 1/4 tsp grated fresh ginger

instructions

  • remove any wilted external leaves and cut off a bit of the stem and a bit off the top
  • cut each head of baby lettuce into 4 long segments
  • dressing : in a small jar, add the lime juice, zest, salt, pepper and olive oil, dill and honey too and shake it up and adjust to taste
  • pour over and coat your baby lettuce salad spears, sprinkle with remaining chopped dill and ground red peppercorns and serve cold
