Spring is finally here and we've spent most of the winter eating apples and oranges. Here's an idea for a simple apple snack before the spring and summer seasons provide us with other fruits that we've missed. My mother used to make these for us as a healthier version of a dessert or snack. Just peel, core, slice and coat your apples in batter and fry. Usually made with cinnamon and sugar, you can try a zestier and fresher version with cardamom seeds with lime and orange zest. So easy !

ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 pinch of salt
  • 4 tbsp sugar
  • 1/4 tsp crushed cardamom seeds
  • zest of 1 lime
  • zest of 1 orange
  • 1/2 tsp vanilla extract
  • 1/2 cup plain yogurt
  • 1/2 cup milk
  • 1 egg (beaten)
  • 4 green apples
  • vegetable oil for frying
  • powdered sugar for sprinkling

instructions

  • peel and core your apples and use a cookie-cutter to create apple cylinders, then slice into rings about 7mm thick
  • mix the flour, baking powder, salt, sugar and crushed cardamom seeds together in a medium bowl
  • in a smaller bowl, combine the milk, yogurt, egg, vanilla extract and zests of lime and orange and combine well
  • add the liquid mixture to the dry mixture and beat until smooth
  • pour enough vegetable oil in a pan (about 40-50mm deep) and heat until very hot (test with a drop of batter that should sizzle)
  • coat 4 apple slices (at a time) with batter and drop them carefully into the heated oil and fry for about 90 seconds on one side and about 60 seconds on the other side until golden brown
  • remove fried rings from the oil and drain them on paper towels
  • serve warm, sprinkled with icing sugar
